Baked Chicken & Potatoes Recipes

Recipe 1

Ingredients
  • One 3-4 pound Chicken (cut into serving pieces)
  • 6 Potatoes (peeled & quartered)
  • 1 cup Tomatoes (crushed)
  • 2 tbsp Parsley
  • 1 tsp Basil
  • 2 cloves Garlic (minced)
  • Salt (to taste)
  • Pepper (to taste)
  • ¼ cup Parmesan Cheese (grated)
  • 3 tbsp Vegetable Oil
Instructions
  • Wash the chicken and wipe it dry using paper towels.
  • Pour adequate oil in a large roasting pan to cover full base of the pan.
  • Place the chicken pieces in the pan.
  • Place potatoes in between the chicken pieces.
  • Add tomatoes, parsley, basil, garlic, salt and pepper over the chicken and potatoes mixture.
  • Finally, spread the grated cheese and vegetable oil.
  • Bake the mixture in the oven at 375 degree F for about 1¼ hours, or until chicken becomes dark brown.
Recipe 2

Ingredients
  • 500 g Desiree Potatoes (cut into 3 cm pieces)
  • Olive Oil
  • Salt (to taste)
  • Pepper (to taste)
  • 4 single Chicken Breast Fillets
  • 30 g Baby Spinach Leaves
  • 70 g fresh Shiitake Mushrooms (thinly sliced)
  • 4 slices light Swiss Cheese
  • Steamed Green Beans and Lemon Wedges (to serve)
Instructions
  • Preheat oven to 200 degree C.
  • Line baking paper in a large roasting pan.
  • Arrange the potatoes in a single layer in the pan.
  • Drizzle olive oil. Add salt and pepper. Toss the mixture to coat well.
  • Roast the potatoes for 30 minutes.
  • Slit through the middle of each chicken breast.
  • Fill each chicken breast with spinach, mushrooms and cheese.
  • Secure the slit with a toothpick.
  • Add the chicken breasts to the potatoes.
  • Roast the preparation for further 15 minutes till the chicken is well cooked.
  • Serve hot with beans and lemon wedges.
